Three Meatless Taco Recipes

It’s Meatless Monday and one of my favorite things to have for dinner is tacos! Check out three Old El Paso tacos recipes perfect for tonight! I personally eat fish Monday’s and just cut out meat but there is even one for those who want strictly veggie tacos.

Fish tacos with lime and coriander

Ingredients
1 Old El Paso Original Taco Dinner Kit
600g cod or haddock, skinned and cut into small chucks
1 ½ lime
1 small Kos lettuce, shredded
1tbsp corn oil
A handful of fresh coriander
Guacamole to serve
Instructions
1. Chuck the fish chunks in a large bowl and sprinkle over the Old El Paso Original Taco Spice Mix. Gently shake the bowl, to coat the fish pieces in the seasoning.
2. Heat the oil in a large frying pan and cook the fish chunks for 2-3 minutes each side until cooked through. Carefully remove the fish and place in a bowl, break into smaller chucks and squeeze over the limejuice.
3. Warm the Old El Paso Crunchy Taco shells, following the instructions on the box.

Griddled tuna tacos with avocado and lime

Ingredients
1 Old El Paso Stand & Stuff Taco Dinner Kit
4 150g tuna steaks, cut into small strips
75g bag watercress
2 ripe avocados, peeled, stoned and sliced
1 small red onion, thinly sliced
2 limes, juiced, zest and grated
1tbsp corn or vegetable oil
A handful of chopped coriander
Extra lime wedges

Instructions
1. Grab a shallow non-metallic dish, and sprinkle the Old El Paso Original Taco Spice Mix, with the oil, lime zest and juice. Add the tuna and turn to coat in the mixture. Leave to marinate for 15-20 minutes.
2. Preheat a griddle pan or barbecue to moderately hot and cook the tuna steaks for 1-2 minutes each side for rare, or 2-3 minutes each side for medium to well done, brushing with any remaining marinade. Rest for 2 minutes and then thinly slice.
3. Meanwhile chuck the avocado slices, onion, coriander and limejuice in a bowl and mix gently.
4. Warm the Old El Paso Crunchy Taco Shells, as instructed on the box.

Spicy bean and cheese vegetarian burger tacos

Ingredients

1 Old El Paso Stand & Stuff Taco Dinner Kit
100g cheddar cheese, cut into small chunks
50g fresh breadcrumbs
1 can red kidney beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 small red pepper, diced
1 green pepper, diced
1 egg, beaten
1 shredded lettuce
A handful of chopped coriander
Oil, for brushing

Instructions

1. Throw the beans in a food processor and pulse, retaining some texture. Transfer to a large bowl and stir in the Old El Paso Taco Spice Mix. Add the peppers, cheese, breadcrumbs, egg and coriander and then mix well.
2. With slightly wet hands, shape the mixture into 10 burgers (rough size). Brush with a little oil and cook under a preheated moderate grill or barbecue for 4-5 minutes each side until golden.
3. Warm the Old El Paso Flat Bottom Taco Shells, following the instructions on the box.

    Melissa,
    I thought you were from Boston?
    The grams and kilograms are throwing me around like Sasha grey with Rocco siffredi.
    Did you grow up in Europe or possibly Quebec. I think the latter, as there is definitely something québécois in your perky, upbeat style.
    But for simpletons like me, ounces not grams… I’m so embarrassed sometimez by my lack of worldly skills

      Here are the conversions!
      For the fish tacos – 600g cod or haddock = 21.16 oz (1.32 pounds)
      For the tuna – 150 g tuna steaks= 5.29 oz
      75g bag watercress = 2.64 oz
      Spicy bean and cheese vegetarian burger tacos- 100g cheddar cheese is 3.52 oz
      50g fresh breadcrumbs = 1.76 oz

    These are great ideas. We generally use Boca crumbles (looks like beef, but all vegetarian).
