My take?
This is a game changer for Meatless Monday or really any day! The texture is just like pasta but with no guilt what so ever. Plus it is so easy and it takes less time then real pasta anyways. The possibilities are endless from eating them with marinara sauce, to seafood with butter sauce, creamy sauce, or whatever you would normally eat angel hair pasta with! You know how I like trying pasta substitutes like the spaghetti squash and the tofu shirataki noodles and these are better!

    This dish is our family’s go-to meal when I need something quick. I can make it the night before or earlier in the day, then just heat up what we need when it’s time to eat, which comes in handy on those nights where we’re off and running to so many sporting events. This time I used ground chicken but I’ve also used ground beef and turkey and threw in some mushrooms once or twice too. Just add whatever you and your family like. You can also substitute whole wheat pasta or pasta plus (like what I normally use), but I’m trying to use up what’s in my cabinets.

    My grandmother was Italian, so when we would eat at her house the meal would be pasta AND bread! (And meatballs and green salad.) She made the pasta and sauce herself; it was soooo good. When she was in her late ’80s I made pasta for her and she said, “where’s the bread?” Italians use it to mop up the leftover sauce on the plate. When I eat pasta now I make it as part of a one dish meal – sauteed onion and whatever vegetable is in season, garlic, cannellini or garbanzo beans, tomato sauce, a little shredded parmesan, and meatballs for my husband and soy meatballs for me. Easy and healthy.
