I hope everyone had a good day yesterday! I headed to a house party about 20 minutes north of Boston for a BBQ with the bf and his friends. It was a long, hot (90 degrees!) mosquito filled day but we had a blast. I decided to contribute a cocktail to the party and before I left whipped up a pitcher of the watermelon spritzer’s I posted on my worthwhile reads from the web this week recently.
I cheated a bit and bought already cut up watermelon and used lemon juice instead of fresh lemons. It is super easy though! Just put all the ingredients in a food processor or blender.
From the recipe I used, I also poured in a bit more seltzer then it said and used more watermelon.
And what’s a party without alcohol? I spiked it with vodka and served them in little red party cups with ice cubes. It was a big hit! The only thing I would change is to have served it with a garnish like lemon or lime wedges or maybe I could have even used a flavored vodka instead of plain and the mint the recipe called for. But it is so refreshing.
The BBQ had all the basics like chips and dip, tortilla chips with salsa, and then there was also pasta salad with veggies, feta, and dried cranberries, tossed with vinaigrette. We did a few rounds of grilling burgers, hot dogs, sausage, and some marinated chicken tips. Do you like the bf’s Hawaiian shirt? Me, not so much.
Dessert included truffles, peanut bars, and other goodies.
The day was filled with sitting around in lawn chairs and chatting, while sipping Summer Ale, Hard Cider, and other summer centric beer selections (plus my watermelon concoction) along with easy yard games like washers, can crushing with tires, and Polish horseshoes.
We ended the night with fireworks around ten. Do you think we have enough? I didn’t bother bringing my camera for that part of the night since it was looking like rain was a possibility and it was thundering and I didn’t want anything to happen to it. But hopefully you saw your own fireworks last night too and had a great day!
