Big news for Nellie’s Free Range and Red Sox!
Nellie’s Free Range Eggs is now the official egg of the Boston Red Sox.
Eggs are a great source of protein, which baseball players and fans need to help to power through the 3+ hours of a baseball game! Whether its game day or not, eggs can be eaten at any meal of the day!
Nellie’s prides themselves on being Certified Humane, “meaning hens have plenty of room to frolic in fields, and in turn, have a more varied diet and are indeed healthier hens. As such, the egg yolks from Nellie’s hens are actually more nutritious than conventional counterparts and this is evidenced by the bright, deep gold color of the yolk.”
Me and the husband put together a quick recipe combining Nellie’s and our Fenway favorite: sausage, peppers, and onions!
We combined it in an easy to devour breakfast or snack pocket, that looks just like the bases on the diamond at Fenway!
Sausage, Pepper, and Onion, egg and cheese pockets:
1 sheet puff pastry
1 Italian sausage
1/3 diced pepper
1/3 diced onion
1/2 cup of shredded cheddar cheese
salt and pepper
Remove sausage from casing, crumble meat, and cook with peppers and onions in a nonstick frying pan until browned. Drain any excess grease and then add to the pan 2 scrambled eggs, salt and pepper to your taste, and cook through.
Cut pastry sheet into 6 squares and divide the egg sausage mixture onto the center of each square on a non stick baking sheet (we used wax paper on the baking sheet for easy clean up). Top with shredded cheese and fold corners of each pastry square to meet in the middle and pinch the edges to seal it into a pocket.
Bake for 20 minutes to melt the cheese and crisp up the pastry dough and cook until golden brown.
Enjoy!

Lol
The Red Sox laid a giant egg this year.
They should have given people eggs to throw at them. Hahaha
