Lemon Chicken Orzo Soup
Serves 6
Chicken Breast, cooked and chopped | 2 cups |
Celery – medium dice | ½ cup |
Carrots – medium dice | ½ cup |
Onion – medium dice | 1 cup |
Canola Oil | 4 tbsp |
Orzo, cooked | 1 cup |
Garlic, finely chopped | 1 clove |
Basil, finely chopped | 1 tsp |
Thyme- fresh | 1 tbp |
Lemon Juice, fresh | 1 lemon |
Lemon Zest | ½ lemon |
Heavy Cream | 1/2 cups |
Chicken Stock | 6 cups |
Salt & Pepper | To Taste |
In a heavy bottom soup pot, heat oil over medium heat and sauté onion, celery, and carrots, until the vegetables begin to sweat and soften, approximately 5-7 minutes. Add garlic; cook and stir until fragrant, about 1 minute more. Season mixture with thyme, basil, salt, black pepper; continue cooking another 30 seconds before pouring chicken broth into the pot. Bring the broth to a boil. Partially cover the pot, reduce heat to medium-low, and simmer until the vegetables are just tender, about 10 minutes. Stir orzo, lemon juice, and lemon zest into the broth; add chicken. Cook until the chicken and orzo are heated through, about 5 minutes. Add heavy cream and cook for an addition 2 to 3 minutes.
A few hints:
- Use Rotisserie style chicken from the grocery store. It adds a nice spike of flavor and saves time in preparation.
- Garnish with fresh grated parmesan and more fresh basil for a beautiful presentation.

OMG….another recipe or food item with abundant calories and too much fat.
Why the need for heavy cream? It’s really a load of extra fat that can be avoided with clever cooking….maybe pureeing a bit of cooked rice or onions would thicken it without so many extra calories.
Plus au bon pain uses fake turkey….yuk

Sandra oh Sandra, that’s not such a wise choice either. Go to Flour and get a real croissant or lacking that pick up Stone and Skillet muffins at whole foods-4 ingreguents, taste great and so much better than supporting the nothingness if a faceless chain like old bun pain
