Food Photo Friday

Happy Friday friends! It felt like spring a hot minute this week and now all of a sudden it is freeezzzing and rainy up in herrrrr. Ugh. Anywho enough complaining about the weather. It is food photo Friday! You all might (eh hem – that means you sisters) be psyched to see there were lots of healthy eats at home the past few days.

Let’s start with Meatless Monday! My latest shake obsession is skim milk, frozen banana, and fruit flavored Greek yogurt. I might try to sneak in kale or spinach or some greens to my next shake and we will see how that goes but for now I have been sticking to fruit.

I also had a tasty creation featuring a red pepper stuffed with brown rice, salsa, and Mexican sprinkled cheese, all melty and perfect! It would also be really good and even more filling with black beans, corn, zucchini, or whatever veggies you might have on hand, but I kept it nice and simple.

Another breakfast that rocked my world this week was a tomato and cheese omelet with sautéed asparagus on the side.

I decided to change up my sandwiches this week! I made simple deviled eggs: hard boiled eggs cut in half, with the yolk mixed with light mayo, salt and pepper. Then stuffed the yolk/mayo combo back into the egg white. But this time I sliced it up and ate it on toasted wheat bread with a dash of fresh chives. Really hit the spot!

Whenever I buy cucumbers for cheap, in bulk, at the local farmers market, I always make simple cucumber salad. I used my mandolin to quickly slice up a cucumber and then put in dried dill, white vinegar, salt, pepper, and garlic salt and let it refrigerate for a bit. I’ve seen similar recipes where you use sweetener but I like it the way it is. I also sometimes add in sour cream. Such a satisfying side dish.

I am a big brushetta fan! I decided to make a mini batch to snack on at home. Instead of basil I used chives, and I included onion powder, minced garlic, salt and pepper, with the diced up tomatoes and olive oil with a dash of balsamic, on a small, sliced toasted baguette. I cut up a tiny mozzarella ball and melted one slice per toast!

And last but not least, the boyfriend introduced me to a new-to-me dinner idea. Sauteed chicken and apple sausages. Have you ever had them? Really juicy and tasty. We had asparagus and mashed potatoes with it.
