Eat and Sip in the City

My Meatless Monday meal plan

If you have been following me for awhile, you know I posted Meatless Monday: 3 reasons to cut out meat one day a week, because I do it! I know some people are much stricter and don’t even have dairy or fish once a week either, but I just stay focused on cutting out turkey, chicken, pork, and red meat on Monday’s, which are things I literally eat at every meal it seems, on the average day! Here is a peek into what I ate today for MM!

Breakfast:

Greek yogurt, banana, and Folgers iced coffee with Coffee-mate

Lunch:

A trip to Whole Foods after my work out lead to a stroll around the prepared foods and salad bar! I got grilled zucchini, shredded carrots and squash, Greek orzo salad with feta, tomatoes, olives, chick peas, and other goodies mixed in, one large eggplant ravioli, and a little bit of pesto pasta that had spinach and tomatoes. Really good and hit the spot!

Snack:

Whole wheat mini pita with red pepper hummus

Dinner:

Also from Whole Foods Market, a combo that offered up both spicy salmon and tuna. I also got a side of their shrimp spring rolls!

On deck for dessert? If hunger strikes later on while I am watching some quality reality TV shows, eh hem…. Bachelor!!!  I have Fiber One Brownies!

    Love the Meatless Monday posts! At the place I work, The Food Evolution, we run cooking classes one of which features Menu for a Meatless Monday, they’re great and I love seeing it in other places!
