I love recipes that make me think to myself why didn’t I think of that? I have made myself pita pizzas but never Pizza Quesadillas (aka Pizzadillas)! Yum!
For this Baked potato casserole recipe, it is like mashed potatoes, baked potatoes, and even potatoes au gratin all combined together in an easy to make and serve warm cheesy dish. It seems like it would make a perfect side dish alongside ham, chicken, or whatever is on your table for the holidays.

Monday at work we are doing our annual cookie and Yankee swap so I am on the prowl for new-to-me cookie recipes. Peanut Butter Chocolate Chip Oatmeal Cookies don’t look too festive but certainly have delicious ingredients. Maybe I will make these? I dunno; the search continues but I will hang on to this one too!
