When the temps go up outside, who really wants to turn on a hot stove? A perfect lunch or dinner for summer or really any time of year, this turkey and apple sandwich is easy to make. The apples give the sandwich a sweet, cool, crunch, perfect on a warm day, while the onions give it a kick of flavor, crisp lettuce bulks it up, and mustard compliments the meat and cheese.
It’s also healthy, at just 6 Weight Watchers PointsPlus (turkey 1, cheese 3, bread 2). For a variation on the sandwich, add crispy bacon strips to add even more smokey flavor and texture. You could even omit the lettuce and make a melt in the toaster oven or toss it in your panini press for a cheesy, gooey, warm treat.

Let me know what you think! Feel free to use honey or dijon mustard, cheddar, havarti, or gruyere cheese, and whatever apples you have on hand! You will not be disappointed!
